Wholemeal Banana Muffins

Ingredients
​

150g soft spread
-
150g soft brown sugar
-
3 eggs
-
150g self-raising flour
-
2 large or 3 small mashed bananas (over ripe bananas are the best for this recipe because they have so much flavour)

Method
​

Pre-heat oven to 180°C.

Line muffin trays with paper cases.

Mix the spread and brown sugar together in a large bowl using the hand mixer.

Add the eggs and mashed bananas to the bowl and mix together well.

Finally, add the wholemeal self-raising flour to the bowl and mix well.

Spoon the mixture into the muffin cases and fill to approximately 2/3rds full.

Bake in the oven for approximately 20 minutes.

To check that the muffins are cooked stick a skewer into the centre of each one. If the skewer comes out clean the muffins are cooked. If the skewer comes out with mixture on it the muffins need a little longer to bake. Allow muffins to cool on a cooling rack.
