Wholemeal Banana Muffins

Makes 12

Equipment Required

​

  • Weighing scales

  • Muffin tray

  • Hand mixer

  • Paper muffin cases

  • Large mixing bowl

  • Cooling rack

  • Large spoon

  • Oven gloves

​

Ingredients

​

  • 150g soft spread

  • 150g soft brown sugar

  • 3 eggs

  • 150g self-raising flour

  • 2 large or 3 small mashed bananas (over ripe bananas are the best for this recipe because they have so much flavour)

Method

​

  • Pre-heat oven to 180°C.

  • Line muffin trays with paper cases.

  • Mix the spread and brown sugar together in a large bowl using the hand mixer.

  • Add the eggs and mashed bananas to the bowl and mix together well.

  • Finally, add the wholemeal self-raising flour to the bowl and mix well.

  • Spoon the mixture into the muffin cases and fill to approximately 2/3rds full.

  • Bake in the oven for approximately 20 minutes.

  • To check that the muffins are cooked stick a skewer into the centre of each one.  If the skewer comes out clean the muffins are cooked.  If the skewer comes out with mixture on it the muffins need a little longer to bake.  Allow muffins to cool on a cooling rack.
